<p>Making Sunshine Pancakes</p>

Fun Breakfast with/for kids!

Its very simple, just takes a few minutes to cut up the fruits and prepare the chocolate in a baggy to draw with.

Use your favorite pancake recipe (OR use my recipe, below) and decorate it into a sunshine with strawberries, bananas and chocolate.

I let little dude put all the ingredients together, mix the batch and pour the first batter on the griddle. Yes it was a little sloppy and went down the side of the griddle, but when else do will he learn. The next pancakes I made on my own. And we arranged the strawberries and bananas together. I finished it off with some nutella smiley face.

Recipe:  Makes about 8 six inch pancakes!

Ingredients:

2 Cups all-purpose flour

2 teaspoons baking powder

1/4 Teaspoon salt

2 Tbl spoon sugar

2 eggs

1.5 - 2 Cups of milk

2 Tbl spoon melted and cooled butter, + oil for cooking

Basket of strawberries

1 Banana

6 Tbl spoons of nutella (and a ziplock bag or dessert bag to draw)

DIRECTIONS:

1. Combine the flour, baking powder, sugar and salt in a bowl and mix well.

2. Whisk egg and milk together in a bowl.

3. Add the melted butter to the milk mixture.

4. Pour  the dry ingredients into the milk mixture and stir. If it seems too thick, add a bit more milk.

5. Heat a griddle or nonstick pan over medium heat and coat it with vegetable oil.

6. Drop the batter from a large spoon and cook until the first side is golden brown.

7. Flip and cook until the other side is golden brown. This happens quickly so peek after 30 seconds and watch carefully!

Adjust the heat setting if necessary.

8. Wipe the griddle clean with a with a greased paper towel between batches.

Serve immediately with a greased folded napkin
